Preheat the oven to 185–190 °C. Prepare a baking sheet (approx. 30 cm × 40 cm) and line it with baking paper. Grind 180 g of the oats into fine flour; use the remaining 100 g whole.
For the oat biscuits, mix the oat flour, whole oats, ground cinnamon, melted butter, milk, baking powder, ground walnuts, and egg in a large bowl to form a rather soft dough. If the dough is too firm, add a splash more milk. Form 14 circles (approx. 7 cm Ø) on the baking sheet with a spoon. Bake them for 17–18 minutes in the preheated oven.
Remove the biscuits from the oven and let them cool completely for at least 40 minutes.
Chef's tip
For an extra nutty note, you can briefly toast the walnuts in a pan before grinding them.
