Preparation method
Place the dried dates in a bowl, cover with water, and ideally let them soak overnight (or for at least 2 hours) to soften them nicely. Afterwards, drain the water, cut the dates into coarse pieces, and finely purée them in a blender.
Add the cashew nuts and baking cocoa to the date purée and mix everything briefly again until a homogeneous, slightly lumpy mass is formed.
Press the mixture firmly into a bar mold. If no special mold is available, line a small loaf pan with baking paper, add the mixture, and press it down firmly with your hands or a spoon so that no gaps remain.
Chef's tip
For an extra crunchy note, you can roughly chop a few cashew nuts and fold them into the finished mixture at the very end.
