Preparation method

Waffle Preparation

Cut the breakfast bacon into fine cubes and fry until crispy in a pan. In a bowl, whisk one egg (out of a total of five) with the whole milk. Add the rye wholemeal flour, the fried bacon, the pressed garlic, the baking powder, and a pinch of salt, then mix everything into a smooth batter.

Preheat the waffle iron and, if necessary, lightly grease it with a little lard. For each waffle, place about 2 tablespoons of batter into the iron and bake for approx. 10 minutes until golden brown and crispy. Keep the finished waffles warm.

Topping and Serving

Finely dice the onion and sauté until translucent in a pan with the remaining lard. Add the fresh leaf spinach, lightly salt it, and let it wilt until soft. In a separate pan, fry the remaining four eggs into fried eggs.

Chef's tip

For an extra crispy touch, you can also add the Gouda directly onto the fried egg while it's still setting in the pan. This way, the cheese melts particularly nicely.
