Preheat the oven to 160 °C top/bottom heat.

Quarter the apples, remove the core. Season the meat generously with salt and pepper on both sides.

Heat the oil in an oven-safe pan over high heat. Sear the chops until golden brown on all sides, don't forget the fatty edge. Remove the meat and set aside on a plate.

Chef's tip

For this recipe, you will need an oven-safe pan with a matching lid. Alternatively, you can transfer the dish to a casserole dish after searing.
