Preparation of the Patties
Finely chop garlic and onion. Coarsely crumble the feta with your hands and set aside. Cut the chili pepper lengthwise, deseed, and finely dice the flesh. Also finely chop the olives (40 g for the meat).
In a bowl, thoroughly mix the minced pork with onion, garlic, chili, chopped olives, breadcrumbs, finely chopped mint, salt, and pepper. Let the mixture rest in the refrigerator for about 20 minutes.
Divide the meat into 8 equal portions and flatten each. Distribute the crumbled feta onto 4 meat patties and cover with the remaining 4 patties. Press the edges firmly together and form into patties.
Chef's tip
For a finer texture, you can briefly blend olives, spring onion, chili, lemon juice, and olive oil with an immersion blender before mixing them with the cucumber cubes and dill.
If you prefer it less spicy, simply use less chili or omit it entirely. The patties also taste excellent with a dollop of Greek yogurt.
