- 200 ml soy sauce
- 130 g finely grated apple
- 110 g brown cane sugar
- 1 tbsp finely chopped fresh coriander

In a small saucepan, mix the soy sauce with 100 ml water and the brown cane sugar. Simmer over medium heat until the liquid has reduced to about two-thirds of its original volume.

Remove the saucepan from the heat. Finely grate the apple and stir it into the sauce along with the finely chopped coriander. Let the sauce cool or use it directly as a marinade.
Chef's tip
The sauce will keep for several days in a clean jar in the refrigerator. Simply stir briefly before use.
