Wash the large eggplants and cut them lengthwise into slices. Lightly salt them and let them sit briefly so they "sweat". Afterwards, pat them dry with kitchen paper.

Preheat the grill to approx. 250 degrees. Also slice the Halloumi cheese.

Grill the eggplant slices, Halloumi, cherry tomatoes, and mini eggplants on the grill for approx. 5 minutes on each side until they have nice grill marks.
Chef's tip
For a vegan option, you can replace the Halloumi with grilled tofu.
