
Sweet Potato Lasagna with Minced Beef

Preparation method
Preheat the oven to 185 °C top/bottom heat. Wash the sweet potatoes thoroughly, peel them, and cut or slice them into approximately 2–3 mm thin slices. Peel the onion and garlic, finely chop the onion, and finely grate the garlic.
In a bowl, mix the cottage cheese with the egg and one teaspoon of oregano. Season with salt and pepper and set aside.
Heat 2 tbsp olive oil in a deep pan. Sauté the chopped onion until translucent for about 2–3 minutes. Add the grated garlic and roast for another minute. Add the minced beef and brown vigorously for about 10 minutes. Then add thyme, rosemary, and the peeled canned tomatoes. Mix everything well, lightly crushing the tomatoes, and remove the pan from the heat.
Chef's tip
For a vegetarian version, you can simply replace the minced meat with finely diced zucchini and eggplant.
