Preheat the oven to 180 °C top/bottom heat. Thoroughly grease a baking dish with a little unsalted butter.

Thoroughly wash and peel the potatoes, then slice or mandoline them into approx. 3 mm thin slices. Wash the pears, quarter them, remove the core, and also cut into fine slices. Peel and finely chop the garlic. Finely grate the mountain cheese and pluck the thyme leaves from the sprigs.

Whisking the mixture & layering

In a bowl, whisk together the sour cream, whipping cream, and free-range eggs until smooth. Stir in the chopped garlic, half of the thyme leaves, a pinch of grated nutmeg, fine salt, and freshly ground black pepper.

Chef's tip

Firm Mostviertel pear varieties such as Williams Christ or Conference are ideal for a particularly intense aroma, as they hold their shape during baking in the oven and release a delicate sweetness.
