Ingredients
- 200 g broccoli
- 250 g sweet potatoes
- 3 pcs eggs
- 100 ml whipping cream
- 1 clove garlic
- 1 pinch salt
- 1 pinch black pepper
Method
- 1Preheat the oven to 180 °C (top/bottom heat).
- 2Fill a large pot about halfway with water and bring to a boil.
- 3Meanwhile, peel the sweet potatoes and cut them into slices about 0.5 cm thick. Wash the broccoli and divide it into small florets.
- 4Add the sweet potatoes and broccoli to the boiling water and blanch for about 2 minutes over medium heat. Then drain.
- 5Layer the pre-cooked vegetables in a small baking dish (approx. 20 cm x 30 cm).
- 6Whisk the eggs with the whipping cream and pressed garlic. Pour the mixture evenly over the vegetables in the dish.
- 7Season everything with salt and pepper. Place the dish in the oven and bake for about 15–20 minutes at 170–180 °C until golden brown.
