Cut onion, carrots, celery, and garlic into very fine cubes (approx. 3 mm).

Heat half of the olive oil in a pot over medium heat. Sauté carrots and celery in it for about 2 minutes until golden brown. Add onion and garlic and sauté for another 2 minutes.

Add the minced meat (beef and pork), season with salt and pepper. Add bay leaf and three-quarters of the oregano and thyme. Sauté for about 2 minutes, stirring constantly. Deglaze with white wine and reduce for 1 minute.
Chef's tip
Serve with fresh baguette or parsley potatoes to soak up the delicious sauce.
