Preheat the oven to 220–225 °C and prepare a medium-sized baking dish (approx. 30 cm x 25 cm).

Cut the breakfast bacon into small cubes and place them in the baking dish. Put the dish in the preheated oven and let the bacon render slightly crispy for about 10 minutes at 220–225 °C.

Meanwhile, prepare the other ingredients: Divide the cauliflower into small florets, crumble the feta, and cut the mozzarella (if not using mini mozzarella) into small cubes.
Chef's tip
For a vegetarian version, simply omit the bacon and use a little more olive oil or smoked paprika powder for a smoky aroma instead.
