Bring salted water to a boil in a small pot over high heat. Meanwhile, wash the broccoli and divide it into small florets.

Once the water boils, add the broccoli florets and cook over high heat for about 7–8 minutes until al dente.

Meanwhile, preheat the oven to 220–225 °C and prepare a small baking dish. In a bowl, thoroughly mix the finely grated blue cheese, grated Parmesan, egg yolk, milk, as well as nutmeg, salt, and pepper.
Chef's tip
Serve with some crispy potatoes or a fresh baguette to soak up the delicious cheese sauce.
