Traditionelle Tiroler Moosbeernocken sind die Krönung der österreichischen Alpenküche im Spätsommer. Saftige frische Heidelbeeren in flaumigem Teig, in feiner Butter knusprig ausgebacken und mit süßem Staubzucker serviert – ein herrlicher Klassiker für Naschkatzen!

Sort the fresh blueberries, wash them gently, and drain well on paper towels.

In a bowl, whisk together the eggs, whole milk, granulated sugar, vanilla sugar, and a pinch of fine salt. Gradually stir in the smooth wheat flour until a thick, smooth batter forms.

Finally, gently fold the blueberries into the batter with a spatula so that the berries remain whole and only release their juice while frying.

Chef's tip

For an authentic alpine hut experience, it is best to use real wild blueberries – they turn the batter a wonderful deep blue and have a particularly intense sweet and sour flavor.

Serve with a spoonful of whipped cream or a scoop of creamy vanilla ice cream as desired.
