- 800 g apples (e.g., Golden Delicious or Gala)
- 100 g granulated sugar
- 1 tsp lemon juice, zest of ½ organic lemon, and 1 lemon slice
- 5 whole cloves
- 2 cinnamon sticks
- 2 whole star anise

Peel, core, and cut the apples into eighths. Place them in a pot, drizzle with lemon juice, and pour in 700 ml of water.

Add sugar, cinnamon sticks, star anise, cloves, lemon zest, and the lemon slice.

Simmer over low heat for about 20 minutes until the apples are soft but still hold their shape. It's best to serve the compote lukewarm.
Chef's tip
Only use the yellow part of the lemon peel, as the white part tastes bitter.
The apples should be soft but not fall apart. Pay attention to the cooking time depending on the apple variety.
The lemon juice helps the apples retain their light color and prevents them from browning.
