Prepare Date Caramel
Cover the dates with water and let them soak for about 1 hour. Then remove the pit, place the dates in a food processor, and blend finely. Add the cooking cream and 3 tablespoons of water, and blend again briefly until a smooth, caramel-like consistency is achieved.
Prepare Baked Apples
Preheat the oven to 180 °C top/bottom heat. Peel the apples, remove the core, and cut them into small cubes. Mix with the ground cinnamon, spread on a baking sheet lined with parchment paper, and roast in the oven for approx. 15 minutes.
Cream and Layers
Coarsely crumble the whole grain biscuits. For the cream, stir the quark smooth with yogurt, ricotta, and vanilla extract.
Chef's tip
For an even more intense aroma, you can briefly toast the hazelnuts in a dry pan before chopping.
