Preparation of the syrup

Peel the ginger and cut it into thin slices.

In a small saucepan, mix 500 ml of water with the granulated sugar and lemon zest. Bring to a boil over medium heat and simmer until a syrupy consistency is achieved. Then add the ginger slices.

Let the syrup boil for another 2 minutes, then let it cool to room temperature.

Chef's tip

For a particularly appealing look, you can also add fresh lemon slices and a few thin slices of fresh ginger directly to the glass.

If you strain the ginger syrup, it will keep for several weeks in a sealed bottle in the refrigerator and can be used at any time for a quick lemonade.
