Preparation method
Preparation of the Panna Cotta
Put the coconut milk together with the raw cane sugar and agar-agar into a pot and stir well.
Slit the vanilla pod lengthwise, scrape out the seeds with a knife, and add both the seeds and the pod to the coconut milk. Bring the mixture to a boil while stirring. Once it boils, reduce the heat and let it simmer for about 2 minutes (agar-agar needs heat to bind). Turn off the stove and let the vanilla pod steep for about 20 more minutes.
After steeping, remove the vanilla pod and stir in the lime juice. Pour the liquid into prepared glasses and let it set in the refrigerator (at least 3-4 hours).
Chef's tip
For a particularly fine result, you can strain the panna cotta mixture through a sieve before pouring.
If you can't get fresh apricots, you can also use frozen fruits – but make sure to drain them well beforehand.
