Preparation method
Peel the pears, quarter or eighth them, and remove the core. Immediately drizzle with a little lemon juice to prevent them from browning.
Place the pear pieces in a pot, pour in approx. 700 ml of water, and add the remaining lemon juice, sugar, and spices (cinnamon sticks, cloves, star anise, and lemon peel).
Bring everything to a boil, then reduce the heat and let the compote simmer gently for about 20 minutes until the pears are soft but still firm to the bite.
Chef's tip
For the lemon peel, use only the yellow part, as the white part tastes bitter.
The pears should be soft but not falling apart. Cooking time may vary slightly depending on the variety.
If you prefer it sweeter, you can increase the amount of sugar as desired.
