Soak the gelatin sheets in a bowl of cold water for about 5 minutes.

Meanwhile, open the mangosteens, remove the white flesh, and finely purée it. Strain the purée through a fine sieve to remove any seeds or fibers.

Gently warm half of the milk in a small saucepan (do not boil). Squeeze out the soaked gelatin well and dissolve it completely in the warm milk, stirring.
Chef's tip
If you cannot find fresh mangosteens, you can also use canned mangosteens – however, be sure to adjust the sugar content in the recipe accordingly.
