- 70 g buckwheat flour
- 110 g whole spelt flour smooth
- 3 free-range eggs M
- 500 ml whole milk 3.5% fat
- 1 pinch fine iodized table salt
- 450 g fresh apples
- 2 tbsp mildly salted butter
- 1 tbsp blossom honey
- 2 tsp ground cinnamon
Dough Preparation
Sift the buckwheat and whole spelt flour into a large bowl. Add the eggs, milk, and a pinch of salt, and mix everything into a smooth batter. Let the batter rest for about 10 minutes.
Prepare Apple Filling
In the meantime, prepare the apple filling: Wash the apples, remove the core, and cut them into small cubes. Heat 2 tablespoons of butter in a coated pan, add the apple cubes, and roast them for about 5 minutes over medium heat. Remove the pan from the heat, stir in the honey and cinnamon, and mix everything well.
Bake & Serve Pancakes
Heat another coated pan and bake pancakes one after another from the batter over medium heat (approx. 1 minute per side). The batter should be enough for about 10 pieces. Fill the finished pancakes with the apple mixture, roll them up, and serve them warm.
Chef's tip
Serve the pancakes with a dollop of sour cream or Greek yogurt for an extra fresh touch.
