Preheat the oven to 175 °C (top/bottom heat). If using fresh apples, peel, core, and purée them into a fine sauce with an immersion blender. Alternatively, use unsweetened apple sauce directly.

In a large bowl, combine the fine oat flakes with the coarsely chopped pecans, flaxseeds, chicory syrup, and about one tablespoon of cinnamon. Add the apple sauce and mix everything well until a uniform mixture is formed.

Line a baking sheet with baking paper and spread the granola mixture in a thin, even layer.
Chef's tip
Enjoy the granola best with natural yogurt, fresh berries, or a splash of cold milk. It is also excellent as a topping for porridge or smoothie bowls.
