
Pear Sorbet with Rosemary and Vodka

Preparation method

Peel the pears, remove the core, and cut them into small pieces. Stir the granulated sugar in a pot with a little water, bring to a boil, and simmer for about 2 minutes until the sugar has completely dissolved.

Add the pear pieces, finely chopped rosemary, and grated lemon zest. Simmer everything for about 5 minutes until the pears become soft and slightly fall apart.

Stir the lemon juice into the cooked pears. Let the mixture cool down slightly, then finely puree it with an immersion blender. For an extra fine result, the pear puree can be strained through a sieve.
Chef's tip
Serve the sorbet in pre-chilled glasses and garnish with a small fresh rosemary sprig for a particularly elegant look.
