- 500 g strawberries (400 g frozen, 100 g fresh)
- 250 g quark (low-fat)
- 60 g gluten-free oat flakes
- 20 g almond slivers
- 2 tbsp still water
First, prepare the frozen strawberries: Place them together with 2 tablespoons of water in a small pot and let them simmer over medium heat for about 10–15 minutes until soft. Then mash the berries with a fork and let the fruit puree cool for about 20–30 minutes.
Meanwhile, toast the oat flakes together with the almond slivers in a coated pan without fat over medium heat, stirring constantly, until golden brown (approx. 3–5 minutes). Set aside and let cool.
Now mix half of the cooled strawberry puree into the quark. Prepare three glasses (approx. 200 ml capacity) and layer the parfait in the following order: strawberry puree, quark cream, oat flake-almond mixture. Repeat the process a second time. Finally, slice the fresh strawberries thinly and garnish the parfait with them. Let it chill in the refrigerator for at least 15 minutes before serving.
Chef's tip
This parfait is excellent as a light snack. If you want to enjoy it as a full breakfast, simply increase the amount of oat flakes to 120 g.
