Preparation of the Strawberries

Thoroughly wash, hull, and cut the strawberries into eighths. Sprinkle with 5 teaspoons of powdered sugar, gently mix, and let sit.
Preparation of the Cream

Fill a pot with water and place a suitable bowl (made of porcelain, glass, or stainless steel) on top. Make sure the bottom of the bowl does not touch the water. Bring the water to a boil.

Once the water is simmering, add the egg yolks, Moscato white wine, and 200 g of powdered sugar to the bowl. Continuously whisk with a whisk until a frothy foam forms. Add the Marsala wine towards the end of whisking.
Chef's tip
For a special aroma, you can flambé the sabayon with a blowtorch just before serving. However, the dessert also tastes excellent without this step. Be creative when serving!
