Ingredients

  • 200 g wheat flour
  • 50 g nut butter
  • 3 pcs bananas
  • 1 pc Nutella
  • 100 g sugar
  • 2 pcs free-range eggs M
  • 80 ml extra virgin olive oil
  • 1 pc fine table salt
  • 3 pcs baking powder
  • 1 pc vanilla sugar
  • 1 pc ground cinnamon

Method

    Preheat the oven to 180 °C (top/bottom heat). Grease a loaf pan (approx. 25 cm) with a little butter and dust with flour.

    Mash the ripe bananas finely in a large bowl with a fork or a potato masher. Add olive oil, sugar, vanilla sugar, and the eggs. Mix everything well with a whisk or mixer until the mixture is homogeneous.

    In a separate bowl, mix flour, baking powder, salt, and cinnamon.

    The cake tastes particularly good when the banana bread is slightly warmed.

    Gradually add the flour mixture to the banana mixture and carefully fold in with a spatula or a mixer on low speed until a smooth batter forms. Do not overmix, so the cake remains light.

    Pour the batter into the prepared pan and smooth it out. Bake the cake in the preheated oven for approx. 50–60 minutes. Check with a wooden skewer to see if the cake is baked through (nothing should stick to the skewer).

    Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then carefully remove it from the pan and let it cool completely on a wire rack.

    Before serving, generously spread the cake with nut butter. Alternatively, the banana bread also tastes excellent with butter or chocolate spread.
