Preparation of the Fruit Layer
First, prepare 3 glasses or cups with a capacity of approx. 250 ml. In a small bowl, mix 8 g of gelatin powder with 50 ml of water and let the mixture swell for approx. 10 minutes.
Meanwhile, put the frozen forest berries with 15 ml of water into a pot and cook them over medium heat for 5–7 minutes until the berries are soft.
Stir the swollen gelatin (including water) and 2 tbsp of honey into the berries. Cook everything for another 1–2 minutes until the gelatin has completely dissolved. Remove the pot from the heat, distribute the fruit mixture evenly among the glasses, and place them in the refrigerator for approx. 2 hours.
Chef's tip
Before serving, garnish the Panna Cotta with a few fresh berries or mint leaves for a particularly appealing look.
