Grease a flat baking sheet with a little oil and preheat the oven to 160 degrees top/bottom heat.
In a large bowl, mix all dry ingredients except the cranberries. Add the applesauce, honey, and the remaining oil and stir everything thoroughly with a large spoon or wooden spoon. Press the mixture firmly against the bottom and sides of the bowl to combine everything evenly.
Spread the sticky mixture in a thin layer on the baking sheet and place it in the oven. If using convection, reduce the temperature to 150 degrees. Bake for a total of 30-35 minutes. After half the time, turn the granola regularly every 5 minutes. Once the granola is golden brown and no longer sticky, take a small sample and let it cool. If it's crispy after cooling, it's ready. Caution: The line between perfectly baked and burnt is very thin, stay vigilant at the end!
