Preparation method

Thoroughly wash the mint leaves under running water and drain well in a sieve.

Combine the water, granulated sugar, and mint leaves in a pot. Slowly bring the mixture to a boil over low heat.

Let everything simmer for about 2 minutes. Then pour the syrup into a bowl, cover with cling film, and let it steep in the refrigerator for several hours until the liquid has completely cooled.

Chef's tip

To achieve a particularly creamy consistency, stir the sorbet vigorously with a fork every 30 minutes during freezing to break up the ice crystals. This process takes about 3 hours in total.
