Halve the dragon fruit lengthwise and scoop out the flesh with a spoon. Place it in a blender with the coconut water, maple syrup, and lemon balm leaves, then blend until smooth.

Fill ice cream molds halfway with the mixture. Roughly crumble the freeze-dried fruits and distribute them into the molds. Fill up with the remaining fruit mixture and sprinkle with a few more fruit pieces.

Place the molds in the freezer for at least 5-6 hours, preferably overnight.
