Ein traditioneller österreichischer Klassiker für den Herbst: Saftige, mit Zimt marinierte Apfelspalten treffen auf einen herrlich flaumigen Schmarrenteig. Im Backrohr goldgelb gebacken, rustikal zerrissen und mit feinem Staubzucker serviert – der perfekte Mehlspeisentraum!

Preparation method

Peel the apples, core them, and cut them into thin wedges. In a bowl, mix them with the ground cinnamon and about half of the granulated sugar, then let sit briefly.

Separate the eggs. Whip the egg whites with a pinch of fine salt until stiff. In a separate bowl, whisk the egg yolks with whole milk, plain flour, vanilla sugar, and the remaining granulated sugar into a smooth batter. Gently fold in the whipped egg whites so the Schmarrn becomes light and fluffy.

Preheat the oven to 180 °C top/bottom heat. Melt half of the butter in an ovenproof pan and briefly fry the marinated apple wedges in it. Pour the batter over them and cook over medium heat for 2–3 minutes until the bottom is slightly set.

Chef's tip

Tart apple varieties such as Boskoop, Topaz, or Elstar complement the sweetness of the batter particularly well.

Serve the Schmarrn as desired with a scoop of vanilla ice cream or a little lingonberry jam.
