Bring a pot of salted water to a boil. Wash the green beans, trim the ends, and blanch in the boiling water for 4–5 minutes until al dente. Then immediately shock in ice-cold water, drain well, and halve if desired.

Heat 1 tbsp of olive oil in a pan. Briefly sauté the finely chopped garlic cloves and ground cumin, then add the blanched green beans and rinsed chickpeas. Toss over medium heat for 2–3 minutes, season with a pinch of salt and pepper, and remove from the heat.

Sesame Feta & Tahini Dressing

Pat the feta dry and cut into bite-sized cubes. Roll the feta cubes in the sesame seeds until evenly coated. Heat 1 tbsp of olive oil in a non-stick pan and fry the feta cubes over medium heat for about 3–4 minutes until golden brown on all sides.

Chef's tip

Serving suggestion: Fresh flatbread right out of the oven or toasted sourdough bread pairs wonderfully to scoop up the creamy lemon-tahini dressing.

Variation tip: A pinch of Middle Eastern sumac sprinkled over the finished salad adds a wonderfully fruity and tart flavor.
