First, grate the marinated tofu on a coarse grater. Peel the carrots and grate them finely.

Heat one teaspoon of rapeseed oil in a pan. Add the grated tofu and carrots along with the curry powder and roast for about 3 minutes, stirring constantly, until fragrant.

Let the fried mixture cool briefly, then stir it smooth with the quark in a bowl. Season with a pinch of salt and pepper.
Chef's tip
For an extra creamy consistency, you can stir a dash of cream or sour cream into the quark. The spread tastes best after it has chilled briefly in the refrigerator.
