- 300 g cucumber
- 200 g Greek yogurt
- 1 clove fresh garlic
- 1 tbsp fresh dill
- 1 tbsp lemon juice
- 3 tbsp extra virgin olive oil
- 1 tsp fine iodized table salt
Peel the garlic clove, halve it lengthwise, and remove any green germ. Then finely chop the garlic.
Cut off the ends of the cucumber and halve it lengthwise. Scrape out the seeds with a spoon. Now coarsely grate the cucumber, place it in a sieve, and sprinkle with salt over a bowl. Mix well and let it sit for about 10 minutes so that the cucumber loses water.
Squeeze the drained grated cucumber well and mix in a bowl with the Greek yogurt, chopped garlic, finely chopped dill, lemon juice, and olive oil. Chill the tzatziki in the refrigerator for at least 2 hours. Stir well again before serving.
Chef's tip
Serve the tzatziki with warm flatbread or as a side dish to grilled meat. A dash of olive oil and a sprig of fresh dill as a garnish also make the dish a visual highlight.
