Preheat the oven to 140 °C top/bottom heat.

Cut the crusts off the toast bread and cut the inside into cubes of approx. 1 cm. Place the cubes on a baking sheet and toast in the preheated oven for about 15 minutes until golden brown. Then let them cool.

Finely dice the shallots. Peel the garlic, remove the germ, and grate finely.
Chef's tip
For the zest, use only the yellow part of the lemon peel, as the white part contains bitter flavors.
