Preparation of the Pulled Pork
Preheat the oven to 100 °C top/bottom heat.
Rub the pork neck all over with vegetable oil, season generously with salt and pepper (set aside some of the salt and pepper for the salad). Place the meat in a roasting pan, pour in about 1.5 cm of water, and seal the roasting pan tightly with aluminum foil.
Cook in the preheated oven for 10 hours. Then remove the aluminum foil, baste the meat with the pan juices, and continue cooking uncovered in the oven for another 4 hours.
Chef's tip
The pulled pork can be prepared perfectly the day before. Simply warm it up briefly before serving.
For an even more intense flavor, you can rub the meat with a pinch of smoked paprika powder before cooking.
