Ingredients

  • 150g Edamame, blanched
  • 1 carrot
  • 100g red cabbage
  • ½ cucumber
  • 2 tbsp roasted peanuts
  • A handful of fresh cilantro

Ingredients for the Dressing

  • 2 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp honey (or agave syrup)
  • 1 tbsp sesame oil
  • 2 tbsp water

Preparation

    Cut carrots into fine strips, finely shred red cabbage, thinly slice cucumber.

    In a bowl, mix peanut butter with soy sauce, lime juice, honey, sesame oil, and water until a smooth sauce forms.

    Place edamame, carrot, red cabbage, and cucumber in a large bowl.

    Pour dressing over and mix well.

    Roughly chop peanuts and cilantro and sprinkle over before serving.
