Place mustard and balsamic vinegar in a tall, narrow container and briefly mix with an immersion blender.

Slowly pour in the vegetable oil in a thin stream while continuously mixing until a smooth, creamy emulsion forms.

Season with a pinch of salt, stir briefly, and chill in the refrigerator until serving.
Chef's tip
For a sweeter note, you can add a teaspoon of honey. The dressing will keep in a sealed jar in the refrigerator for up to one week.
