Preparing the salad
Cut the tomatoes depending on their size – halve smaller ones (like cherry tomatoes), cut larger ones into quarters, eighths, or slices.
Slice the red onions into very fine rings, rinse briefly in ice-cold water, and drain well. Coarsely chop the parsley.
In a large bowl, gently mix the sliced tomatoes, drained onions, parsley, and salt.
Chef's tip
The finished dressing will keep in a closed container in the refrigerator for up to one week.
A little insider tip: If you dip the onion rings in boiling water for 5 seconds and immediately plunge them into ice water, they lose their sharpness and become more digestible.
