- 4 tbsp light balsamic vinegar
- 3 tbsp liquid honey
- ½ tsp Dijon mustard
- 100 ml extra virgin olive oil
- 1 tsp fine iodized table salt

Place balsamic vinegar, liquid honey, Dijon mustard, salt, and one tablespoon of water into a tall, narrow container.

Briefly blend the ingredients with an immersion blender until well combined.

Then, slowly pour in the olive oil while continuously blending until a smooth, creamy emulsion forms. Serve immediately or store in a cool place.
Chef's tip
For a fruity note, you can add a splash of orange juice. The dressing will keep in the refrigerator in a sealed jar for about a week. Simply shake briefly before use.
