Peel the shallots and garlic cloves and cut them into coarse pieces. Wash the basil leaves and carefully pat them dry with kitchen paper.

Place garlic, shallots, basil, lemon juice, apple cider vinegar, and extra virgin olive oil into a blender or a tall container.

Blend everything finely until a smooth, bright green emulsion forms. Season with table salt and freshly ground white pepper.
Chef's tip
The vinaigrette is excellent with a classic tomato and mozzarella salad or as a dressing for grilled vegetables. It keeps for about 3-4 days in the refrigerator.
