- 300 g cooked beetroot
- 400 g natural tofu
- 1 organic lemon
- 1 pinch ground black pepper
- 1 pinch fine iodized table salt

Finely grate the cooked beetroots or cut them into small cubes. Mash the natural tofu with a fork or grate it finely as well.

Mix the beetroot and tofu well in a bowl. Season to taste with freshly squeezed lemon juice, salt, and pepper. For a particularly fine consistency, the mixture can also be briefly pureed with an immersion blender.
Chef's tip
Serve the spread on fresh black bread and garnish with fresh horseradish or chives as desired.
