Ingredients
- 1 can chickpeas
- 1/2 cucumber
- 50g Feta
- 4 slices bacon
- 1 red onion
- A handful of fresh mint
- 170g Risoni/Orzo Pasta
- Olive oil
Preparation
- 1Bring orzo to a boil in a small pot with approx. 500 ml of water and cook for about 10 minutes – or prepare according to package instructions.
- 2Meanwhile, fry bacon in a little oil until crispy, then drain on paper towels.
- 3Drain the cooked orzo and place it in a large bowl. Drain chickpeas, dice cucumber, chop herbs, slice onion into fine strips, crumble feta, and mix everything together with the crumbled bacon into the orzo.
- 4For the dressing, mix olive oil, lemon juice, pressed garlic, honey, salt, and pepper, then pour over the salad. Mix everything well and enjoy.
