Tiroler Apfelkiachl sind eine unwiderstehliche Spezialität der alpinen Küche: Außen herrlich knusprig und innen watteweich ausgebackener Germteig, gekrönt von einer warmen, mit Zimt und Zitrone gewürzten Apfelfülle. Vollendet mit feinem Staubzucker und einem Löffel herben Wildpreiselbeeren bringen diese traditionellen Kiachl echte Tiroler Hüttenromantik direkt auf den Kaffeetisch.

Preparation method

Prepare the yeast dough

Gently warm the whole milk until lukewarm and melt the unsalted butter. In a large mixing bowl, thoroughly mix the smooth wheat flour with the dry yeast, granulated sugar, and a pinch of salt.

Add the lukewarm milk, melted butter, and eggs to the flour mixture. Knead the dough vigorously with the dough hooks of a hand mixer or stand mixer for about 5 to 7 minutes until a supple, smooth yeast dough forms that comes cleanly away from the bowl.

Cover the bowl with a clean kitchen towel and let the dough rise in a warm, draft-free place for approx. 45 to 60 minutes until doubled in volume.

Chef's tip

Oil temperature test: Hold the handle of a wooden cooking spoon in the hot oil. If small bubbles rise immediately along it, the oil has reached the perfect frying temperature of approx. 170 °C.

Alpine hut secret: If you appreciate the incomparable alpine aroma, you can mix the vegetable oil half-and-half with clarified butter – this ensures the typical traditional festive flavor.
