Place quark, whipping cream, and sugar in a blender. Slit the vanilla pod lengthwise, carefully scrape out the seeds, and add them to the blender as well.

Blend all ingredients thoroughly until a smooth, homogeneous mixture is formed.

Pour the mixture into an ice cream maker and freeze for approx. 30 minutes. The ice cream can be served immediately after preparation in bowls or cones.
Chef's tip
For a particularly fruity note, serve the ice cream with fresh apricots or seasonal berries.
