Preparation method
Finely crumble the cocoa biscuits. This works best in a multi-chopper or by placing the biscuits in a freezer bag and rolling over them with a rolling pin.
Mix the biscuit crumbs in a bowl with the lactose-free cream cheese, a little lemon juice, and freshly grated lemon zest. Work everything into a uniform mass with a fork. If desired, stir in powdered sugar if the mixture should be sweeter.
Wrap the mixture in cling film and let it rest in the refrigerator for at least 30 minutes so that it can be shaped more easily.
Chef's tip
For a particularly fine touch, you can briefly toast the shredded coconut in a dry pan until golden brown before coating.
