Preparation of the Cookies
Knead all ingredients for the dough into a smooth mass. Wrap in cling film and let rest in the refrigerator for 30 to 60 minutes so that the dough becomes firm.
Lightly flour the work surface and roll out the dough to about 4 mm thick. For the typical lace pattern, use an embossing roller or place a clean crochet doily on the dough, press lightly with a normal rolling pin, and carefully peel off the doily again.
Cut out cookies with any shape, place them on a baking sheet lined with baking paper, and put the entire sheet back into the refrigerator for another 30 minutes.
Chef's tip
Use a real crochet doily for the pattern – this creates a particularly authentic vintage look!
The cookies taste best after they have rested for a day.
