In a food processor, combine 350 ml cold water with the flour, olive oil, and crumbled yeast. First knead slowly for 3 minutes, then quickly for 3 minutes.

Add the salt and knead quickly for another 2 minutes. Finally, add the finely chopped rosemary and quickly stir in for 1 minute.

Flour the work surface and turn out the dough onto it. Cover with a clean kitchen towel and let rise for approx. 30–45 minutes until its volume has doubled.
Chef's tip
The grissini are perfectly baked when they crack crisply when broken. Serve them best with a glass of Prosecco or a light white wine.
