Place the chickpeas in a sieve, rinse thoroughly under running water, and drain well. If necessary, finely chop the dates.

Add chickpeas, dates, almond butter, and cinnamon to a blender or food processor. Blend everything into a fine, homogeneous, and pliable mass. If the mixture is too firm, add a teaspoon of water.

Form the mixture into balls about the size of a ping-pong ball with your hands.
Chef's tip
For an extra crunchy note, you can mix chopped nuts into the mixture. The balls will keep in an airtight container in the refrigerator for up to 5 days.
