Preparation method
First, chop the dried fruits to the size of a hazelnut. If you are not using juicy fruits like soft prunes, you should soak them overnight in some fruit juice or water. Drain well and lightly squeeze before use.
Preheat the oven to 180 °C top/bottom heat. Heat a dry pan over medium heat. Roast the hazelnuts in it, stirring constantly, until they smell wonderfully fragrant. Transfer to a bowl, let cool, then roughly chop.
Wipe out the pan with a paper towel. Roast the oat flakes in it until golden brown. Stir regularly so they don't burn and become bitter.
Chef's tip
For an extra fine touch, you can mix a pinch of cinnamon or some grated organic lemon zest into the mixture.
